It has seriously been way too long since my last Menu Plan Monday and I can honestly say that my family and I have really missed having our menus already planned. Let me explain a little.... First my children had were gone most of July, visiting grandparents and other family, so it was just me and the hubby and I GOT LAZY. My home was so quiet, no kids asking for me to cook, clean, read, watch, listen, or fix anything. I am not complaining, I love being a mother, but a break every once in a while is welcomed. But my break was a little too long, me and Bernard began picking up food from here and there, I wasnt needing to clean-up as much since it was just us two. Well with the eating out came a high price tag and we spent way more than we should have on take out, and junk food. So now its time I buckle down and get back on track.
Here is my Menu Plan Monday for the week of 08/13. This week I have a three-pound package of ground beef I will be using this week so I will use I 1/2 pounds for 2 meals, (we are a family of 5).
Dinner: Crispy Beef Tacos -( Toppings: Avocado,Cilantro, Tomatoes, Cheese), Refried Beans, Spanish Rice
Dinner: Homemade Beef & Bacon Meat Loaf, Mashed Potatoes, Peas& Carrots
Dinner: Broccoli & Cheese Tuna Casserole, Baby Spinach, Tomato & Cucumber Salad
Dinner : Leftovers From This Week Buffet
Dinner : Homemade Chicken Nuggets & Homemade French Fries, Baby Carrots
